Title: California Artichokes

  Artichokes

Despite the title, I got this in Florida!

To Prepare: Rinse well, cut stem to one inch or less. Cut off top quarter of artichoke.

To Boil: Stand prepared artichoke in a pan with about 3 inches of water to 1 to 3 tablespoons of lemon juice have been added. Oil and spices may be added as necessary. Cover and boil gently 25 - 45 minutes (depending on size) or until a fork pierces base easily. Drain upside down.

To Steam: Place prepared artichoke on rack above boiling water. Cover and steam 20 - 45 minutes or until done

To microwave: place prepared artichoke upside down in microwave safe covered dish with 1/4 cup of water. Cook at high power for 5-7 minutes. To cook four artichokes, add 1/2 cup water and cook for 12-15 minutes. let stand for 2 minutes. When done, petal near centre will put out easily.
